One Banana Muffins

I created this recipe to use up one dead banana because we never seem to get around to making the banana bread with the frozen bananas.
Ingredients
| 60g | butter |
| 60g | sugar |
| 1 | egg |
| ¼ tsp | salt |
| ½ tsp | vanilla extract |
| 1 | banana |
| < 1 cup | milk |
| 160g | flour |
| 2 tsp | baking powder |
| ⅛ tsp | baking soda |
Bust Out
| Cuisinart | |
| scale | |
| muffin tin OR two 3x6" loaf pans |
Steps
- Preheat oven to 375°
- Put the Cuisinart bowl on the scale, tare in the butter & sugar. Add egg, salt and vanilla extract and process to cream that until the mixture is at room temperature - several minutes.
- In the meantime, using more butter, margarine or shortening, well grease the centre four cavities of your muffin tin OR two 3x6" loaf pans
- Back on the scale, tare in banana and enough milk to make 200g for banana + milk and process until there are only a few small lumps of banana
- Tare in the flour, add baking powder, and baking soda. Do not mix.
- When the oven is at temperature, process 4-5 seconds until smooth-ish
- Distribute the batter into the loaf pans or greased muffin cavities.
- Bake muffins for 20 minutes or tiny loafs for 25 minutes; test with a toothpick a few minutes before the end.
