>>title: Cornmeal Pizza Dough (machine) >>tags: bread machine >>servings: 1 quite thick large pizza dough or 2 normal >>course: Yeast Bread >>source: Pizza by James McNair, 1987 >>note: Life Hack: Your machine does not have a timer program dough cycle so:
  1. tally up half of the minutes of the final rise + all of the minutes of the bake cycle and
  2. add that to the time you want your pizza dough ready, and
  3. use that as your programmed time.

Example: my Cuisinart 1-lb white bread cycle's final Rise is 55 minutes, and Bake is 37 minutes. Divide 55/2 to make about 23. Add that to Bake time to get exactly 1 hour. I want the dough ready at 5:30 when I get home from work, so I set the program cycle to have the "bread" ready at 6:30.

If you are using the program, add the yeast on top of the dry ingredients. Add @warm water{1 c} @sugar or sweetener{1 tsp} and @yeast{1 tbl} to the bucket. Start a timer for 10 minutes but continue. Add @flour{21/4 c}, @yellow cornmeal{1 c}, @salt{1 tsp} & @oil{1/4 c} to the bucket. Put the bucket in the machine pick "Dough" program but don't hit Start. When the 10 minutes is up, hit Start.
