Latkes / Potato Pancakes

Ingredients

Steps
- Put the frying pan on medium heat with vegetable oil about ½" deep to warm up.
- Peel the potatoes
- Put the grater blade in the Cuisinart and grate them, put the knife in and grind up a bit more until the shreds are maybe ½" long
- Put the grated potato in a sieve or cheesecloth over a bowl and squeeze it. Starch will immediately come out of the liquid. Discard the liquid and keep the starch in the bowl. Put the potato in the bowl.
- Peel the onion and grind it fairly fine using the same technique - grate then chop with the blade. Add to the bowl.
- Turn the oil in the pan up to high.
- Break the egg into the Cuisinart and process for a few seconds. Use the rubber scraper to clean the Cuisinart bowl into the mixing bowl.
- Add flour, pepper, and salt to the bowl and mix well.
- With your hand, scoop a handful of mixture out, form into a patty, lay gently onto the flipper and place into the oil. Repeat to cook probably 6 patties at a time.
- Cook over high heat until deep golden brown on the underside - maybe 4 minutes, flip and cook for a little less. Put on a rack in the oven on 200 to keep warm.
- Repeat for rest of mixture.
- While it's cooking, make the applesauce - just puree apples with ascorbic acid/ vitamin C tablets in the cuisinart.
- Serve with the applesauce and sour cream.
