Traditional vegetable (mostly) meal made with all of the first vegetables of the spring

Roughly equal quantities of each vegetable; you can see the proportions in the photo.

Optional: cooked crumbled bacon

Ingredients

onions
butter
new potatoes
carrots
peas
green beans
salt
pepper

saucepan or stew pot

Steps

  1. Depending on how much you're making, in a saucepan or stew pot, fry onions until soft in a bit of butter.
  2. Use new potatoes; scrub well but do not peel. Use whole if tiny, otherwise cut in half.
  3. Add potatoes and just enough water to cover and boil for five minutes.
  4. Add carrots, boil another five minutes.
  5. Add peas for another 3-5 minutes- taste & watch.
  6. Add green beans for another 2-3 minues.
  7. Drain, and save water, set veggies aside, put the water back in the pot.
  8. Boil down cooking water until it's about half.
  9. Add cream & boil until it thickens.
  10. Add veggies back in & heat through. Add salt and freshly ground pepper to taste, and maybe a knob of butter.
